This was a regular favourite in our house when I was growing up. My mum Pat hated cooking but everything she made was delicious - and made with love

The method

  1. 1Slice the onion,
  2. 2Skin the tomatoes and chop
  3. 3Skin the haddock and break into pieces
  4. 4Sweat the onion and garlic in butter
  5. 5Add the tomatoes and season well. Cook for 10 mins
  6. 6Arrange the raw haddock in a shallow baking dish and scatter the prawns on top, then pour the tomato and onion sauce on top
  7. 7Mix the cream and milk in a jug and pour over the top. Grind lots of black pepper on top and a little salt.
  8. 8Bake for 20-25 mins at 190C.
  9. 9Serve with rice and green vegetables

You could use a mix of cod and haddock, or smoked and unsmoked haddock, but obviously smoked haddock has the most flavour
